Hat Creek Grown Steers on the natural grassland of Hat Creek ValleyOur beef herd started from a Hereford genetic base, with a small registered herd that stayed with Henry and Pam through college. The herd expanded after Pam's Dad decided to retire and sell his larger cowherd to Henry and Pam. That was in 1989 and HP Livestock was formed.  The first action was to cull   (remove from the breeding herd)   any cows that had bad temperaments or didn’t raise a healthy, vibrant calf.  Then Pam set out to find the best black-angus bulls that passed along excellent meat characteristics and milking ability to their offspring.  Henry and Pam have continued on that very strict path and improved the cowherd to where our cows are very good mothers that consistently have healthy, beautiful calves.  The mother cows calve in the spring on their own. The natural grasslands are a perfect place to birth and raise their calf.

As each calf is born on our operation, they are individually identified. They are given vaccinations following the Beef Quality Assurance Program protocols. Our cows then must breed back in order to repeat the entire process each year in order to remain in our herd. Calves stay on their mothers until they are seven to eight months old, when they are weaned. The steer calves go into our backgrounding lot, where they learn to eat hay and grain out of a feed rack. The heifer calves remain on grass pasture where they are supplemented with hay and natural protein.
Driveing cattle out to the natural range at Hat CreekOur steers have sold for nine years in the past to Niman Ranch, where they have performed extremely well in Niman's specialty markets. We have over ten years of carcass information, so we know that we develop, raise and feed consistent beef. We keep most of our heifers as replacement females.  Most of our heifers breed at 15-16 months of age, calve the following spring and enter into the cowherd.  If they don't breed, then they enter into our feeding program here at Hat Creek Grown.

Once heifers or steers enter into our feeding program, they are started on rolled corn, oats and barley and fed a mixture of grass and alfalfa hay that we grow here in Hat Creek. We feed them slowly so they mature and stay healthy, gradually increasing the amount of grain they eat until it becomes the bulk of their diet. Our cattle are never fed artificial feeds or ruminant by-products. They never receive hormones or ionophores. We feed them for 140 to 155 days, until they are perfectly matured and fattened (finished). When each beef gets to the desired maturity and finish, we transport them to Johansen's Meat in Orland, California.

At Johansen's, Chris and Darren have a sparkling clean, USDA inspected plant. They hang and age each beef at least 25 days, which is one more step that helps to ensure robust flavor and tenderness. The meat is carefully trimmed of excess external fat and hand-cut to our specifications.  It is then vacuum-sealed and frozen to provide a perfect product for your enjoyment.
